Overseeing a 16mm transfer

I did something really fun, new, and cool to me recently, and you can see part of it here:

When I send in my film footage, usually I take whatever looks they give me. While I don't know the proper lingo to use to tell them how to give me a signature look, it was fun being able to 'sit-in' on the session from 1500 miles away.

That's a luxury I've only heard about others doing before.

Anybody ever sat in on their transfer? I'd like to know more about what I can tell them to do with the film.
