knee and cinema settings to be used in hard sunlight

Do any of you have a lot of experience shooting in hard sunlight and getting good results in the dynamic range ? The situation is high overhead sunlight as consistent with equator regions. I rather shoot in the morning but there is not always that option.
Any suggestions with the settings of this camera? I am shooting reality so I cannot use soft screens etc and al the usual stuff you have if you are making a documentary or film. Unfortunaly I do not have the proper equipment to measure different settings and the camera's lcd I do not trust. So who has some good hands on experience with this camera ?

well, we have some pretty fierce sunlight here in outback australia....

i shoot horses (love saying that!) in paddocks with little or no shade, and one of the priorities (with the sun overhead), is to get some modelling of the body. i shoot with ae at -2 and through a polarised filter - not that the pl does very much (especially with the sun overhead, but it does bring out the horses contours which without the filter aren't that discernible.

i also use these setting for the various other stuff i have to shoot - scenics, interviews, etc.,
