Adjusting a single hue in CS5.5
 
Hi All - can anyone point me to how to do this - I've got some outdoor shots where the grass is very saturated but where some people are also wearing green outfits - but a slightly different green so I need to isolate the particular hue of the green grass and tone it down somewhat

Ideas?

The 3-way color corrector will let you do secondary color correction -- you can get down not only to a very small set of hues, but also saturations, and luminosities. See the Andrew Devis tutorial:
