Adobe Audition Volume Envelopes

So by default Audition puts the pan envelope line in the middle of a waveform in multitrack view and the volume at the top. Well when going in to manipulate a volume envelope - you can't bump the audio up without first applying an offset I think. Any way to change this? So that the volume env line is in the middle?

Also, why would one want to use track envelopes? Maybe once you've got all your wavs exactly where you want them? if you moved a wav that would render a track env useless right?

Thanks

I use the volume envelope, adding nodes, to duck one track under another, and with the pan envelope you can move the sound around the stereo field, either keeping it in one place or with nodes you can move it around throughout the track.
