Hi all --

How can I do time-lapse without having to continuously shoot for an hour and speed-up the footage in post (HD100)?

HDV isn't really conducive to proper single frame timelapse recording because of the GOP structure. Sony always adds a "timelapse" function to their HDV cameras but it is really 15 frame bursts because of the GOP. JVC probably didn't bother adding such a function because it would have had to be minimum 6-frame bursts and it is tough enough to capture normal footage around start/stop breaks.

I always use D-SLRs for proper timelapse. A D-SLR will allow you to do long exposures to get interesting "streaky" effects. (Think Koyaanisqatsi!)
In my case I use a Nikon D-70 with Nikon's Capture software on a laptop. There are also IR and cable-release intervalometers available that can trigger the camera at pre-determined intervals.
