I am planning to use my GL2 to prepare a sequence of stills of a golf swing by extracting them from the clip after capture. I know I will need a very fast shutter speed. But what aperture produces the sharpest stills? And should I use frame mode, or deinterlace in post?

If the lens is typical of photo lenses, the best aperture for sharpness is probably aroudn f/5.6 to f/8 or so, but probably will not make a difference for your purposes. Set aperture to obtain proper exposure. Frame mode will give you an image of the swing every 30th, you want one as often as you can, so use normal mode. which will give an field image every 60th, and put up with the lower resolution. It still (pun?) should be usable for swing analysis.
