Canon EOS 5D Mk. II and Voigtlander 25mm f0.95 Nokton Micro Four Thirds Lens?
 

I don't yet own any HDSLR equipment so please forgive me if I sound foolish...

My question is, would it be possible to use the Voigtlander 25mm f0.95 Nokton Micro Four Thirds Lens in with a Canon EOS 5D Mk. II? Or is that lens instead more suited to the Panasonic AG AF101?

That lens is a micro four third lens. It's mount will not go directly onto a 5Dm2.

The sensor on the AF100 is a micro four thirds (MFT) sensor and is therefore smaller than the sensor in the 5Dm2. This has two effects. One effect is that the area of the lens used for imaging need only be smaller for an MFT sensor. So even if you physically adapted the MFT mount to the Canon mount, you would want to be sure the lens was made to work well on the larger sensor of the 5DM2.

The second effect is that the smaller sensor on the AF100 has the effect of zooming the image. This is called the crop factor and if memory serves, the AF100 crop factor is 2x. This results in a 25mm lens on an AF100 actually appearing as a 50mm lens at the 35 mm film standard. 50mm on a standard film camera is accepted as the "what you see is what you capture" focal length. that is, look in the camera and then look with your eye and the subject will appear the same distance in each case.

Since the 5DM2 sensor is the same size as 35mm film, a 25mm lens provides the field of view of a 25mm lens which is wide angle.

Add all that up and I would conclude that the direct answer to your question is No, the Voightlander 25mm is not the "if you could have just one lens" for the 5Dm2.

A 50mm lens for full size sensors is more the equivalent in terms of the idea of the statement. I looked at the Canon 50mm glass and chose the Sigma 50mm f1.4. That lens has a wonderful boket and the same filter size (77mm) as my other Canon glass and main camcorder (EX1R). It's my favorite lens. YMMV
