No answer to that Dan. It all depends on the footage, each shot will probably vary. But In general, as little as possible

Both are different algorithms. Unsharp Mask is, in theory, more suited to DSLR footage but there are potentially thousands of scenarios where that isn't the case.

Try both, use the one that you like. You'll need different results for different display sizes. The rule of thumb - the smaller the screen the more the sharpening - but again there are exceptions.

I prefer the unsharp option on a flat acquisition from the 5D3. The range from 110 - 130 approx is usually the case for most shots, and just up the radius a smidgen.

Only works well on footage acquired without any sharpening whatsoever in-camera.
