HD video to DVD workflow question

I'll be looking to shoot a documentary here soon, and I am wondering what the best way to go about authoring a DVD would be. I'm going to shoot it in 1080i, and bring it into FCP. From there, I don't know where to go though.

What codec and file type should I export out of FCP with?
Will HD video quality look ok when bringing it into iDVD?

I would then like to create DVD inserts and labels...what's the best way to go about creating a professional looking insert, complete with barcode and DVD symbol? What file type should I use, and dpi?

Thanks so much to anyone who can answer part of all of my questions!
