splitting data among drives?

I feel like I am giving myself a headache trying to figure out how to configure hard drives for my new MacPro. I have been working off of a MBPro off of Firewire 800 drives editing HDV and now XDCAM footage with few problems. I need a second system now though. With my current setup all assets for a project (previews, renders, captures, etc.) go onto the same drive. I have been hearing that its best to break stuff onto different drives. If I have one 320 gb system drive and 2 1TB drives in a RAID 0 config, does it make sense to have different assets in different places? Should I put a drive in the 4th bay for something else, or run the 3 in a RAID 5 config instead?

There are just so many options and I am getting myself confused.

Whey people talk about splitting stuff up on different drives they usually just mean keeping your OS & apps on one drive and your media on the other.
