Here's one:

MacVideo - Editing - Features - What You NEED to Know About FCP 7 - Michael Wohl (part 1)

He starts talking about speed change around 12:00 minutes in.

Wow - ramping in FC7 is a lot easier than 6. Thanks. Anyone know of a tutorial for FCS2 speed ramping?

As far as I know, you can't do speed "ramping" in FCP 6. You can only set a single speed for a clip. You can divide the clip into many smaller clips and then speed up each clip, one by one, but it's a time consuming process.
