Best Camera settings for Post Color Grading

I have an EX3 and have been using picture profiles that I have gotten off the web. Some are beautiful, some not so much. I know that when you shoot using a picture profile you have less flexibility in post color grading. Does anybody have the best settings or maybe just a few simple guidelines to follow for getting footage that will keep all the detail that may look crappy right out of the camera, but gives you the most options in post. I know for DSLR's you turn the sharpness, contrast, and saturation down in order to keep detail in the shadows and the highlights. What is the setup for a camcorder? Is it the factory default?
