The adapters or plug configuration are likely shorting out the bias voltage (aka, Plug-in Power.. not to be confused with Phantom Power which is a different animal).

I a not very familiar with Audacity. usually use the restoration tools included with Sound Forge Pro which are decent. If they cannot fix a problem, I resort to Steinberg's SpectraLayes Pro....

I am not surprised there is noise with 20 foot unbalanced mic cable. A faulty cable can induce noise as well, especially when plug-in power (bias voltage) is present.

If the project's audio is 'stereo' with the narration panned to the center (as it should be), the voice and other elements panned to the center, should come out of both the left and right speakers...

Some of the narration sounds ok and some not so good. From what I hear on my reference monitors, most of the music is significantly louder than the narration.

The noise is broadband so a hum remover tool and would not work well in this scenario. 'Hum' removal tools typically work @ 50 or 60Hz and the pertinent harmonics.
