Focus techniques for cooking show, advice please
 
I'm after some thoughts on focusing while shooting a cooking show with my f350 on my shoulder.
Should I be wide open at infinity on the lens? and around f4-f5. The shoot requires me to be about 1 -2 meters from the talent. I have been playing around with pulling focus but it's really hard to judge if I'm actual spot on in focus with my normal zoom in, focus, zoom out and frame
What do the pros do on TV that I see all the time.

usually in any tv show there is so much light that you can easily change from open lens to iris ~8 (or higher , very dependend on quality of the lens, I recommend not to go far beyond 8) and use deeper field of view (sharper). try to keep wide, use distance to talent instead of zooming. thats a good way to start and stay in focus easily.
