Peaking
 

Hi i am new to videography, can somebody explain peaking on z1 and how the white green and red lines work?

and can somebody tell me how the skin tone detail works

Peaking is an aid for focussing. When you see the colored fringes, the object should be in focus (but personally I don't always trust it myself).

I have never used the skin detail settings, but the concept is that the camera recognizes a range of typical skin colors and applies some mild blurring to them to minimize the appearance of any blemishes.

As Boyd says, peaking appears on SHARP, high contrast edges which SHOULD indicate whether a particular object is in focus AT THE CURRENT FOCAL LENGTH. Don't assume that just because in your wide shot you have Peaking lines on your subject that as you push into a close up the subject will remain in focus. Wide angle lens positions have greater depth of field (there is a larger distance between closest and furthest points that are acceptably in focus) than telephoto lens positions.

As well, I've had situations where the Z1 hasn't been entirely accurate in terms of back focus. If I zoomed IN to an object and set focus and then pulled back to a wide, it was significantly LESS in focus. Peaking has helped me catch this in the past and make corrections. A great tool if used properly; a false friend if you don't understand WHAT it is showing you.
