Example: Choose a custom function of this under C3 and all you need to do now is just select the dial C3. Will it hold the settings such as locked exposure between takes? Can it repeat them?

Mathieu,

The custom function includes many things, like contrast, saturation, and white balance; however, it does not include aperture, shutter and ISO.

This makes sense. The picture style applies to many shots, but the exposure must be set for every shot, because of varying light levels and content.

I believe Mathieu meant the C function(s) which will retain all settings for photography including ISO ans aperture and shutter but I don't think iit will affect movie mode as Canon engineers have been really clever crippling it.
