For example, preparation highlight, ceremony, reception, etc. I just cut my first preparation highlight and it was 1.62Gb. That was 4mins of video.

That doesn't sound like you rendered the Video to MPEG2, or if you did, it was HD. We need more information to answer. What file type are you rendering to, what resolution, what bitrate, etc.

Personally, I use Sony DVD-R discs for all my "generic" looking DVDs, and I use Verbatim Lightscribe DVD-Rs for all my weddings.
