I want to upgrade my NLE to Premiere, or Vegas. My current editor doesn't allow me to manipulate the audio that is recorded with the video - the on-board mike and the wireless mikes. Will these higher end editors give me the options to fade the recorded audio at different places within a clip; mute it for parts of the clips; increase/decrease volumes on the individual channels, etc?

Both Premiere and Vegas will allow this and a bit more.

Especially Vegas has very powerful audio capabilities. Fading
is one of the simplest things it can do with audio. Check out

I've just started using Premiere 6.0.1 to edit some trailers and ongoing skit episodes for an extended program our church is doing (40 Days of Purpose, based on the book "The Purpose Driven Life") and have been pleasantly surprised by the audio editing capabilities. I thought I'd have to export the audio to my Cool Edit Pro program, but most of the stuff you can do right in Premiere.

Audio effects included are: Bandpass (hi pass, lo pass, and notch/hum filters), Channel (left/right manipulations), DirectX filter (not sure what that does), Dynamics (Boost, Compressor/Expander, Noise Gate), EQ (simple bass/treble, graphic, and parametric), Effects (chorus, flanger, etc), and Reverb/Delay.

In addition, you can set the timeline to expand the audio tracks and use the mouse pointer to lower, raise, or fade audio levels at any number of points. I've been using that one a lot to match audio levels between scene changes.
