Okay, so I shoot a 30p video, edit it, and bring it into DVD Studio Pro. There, I create all of the neccesary menus etc. I send this off to a replicating house and have 15,000 DVDs produced. Is it that simple? Are there bumps along the road that I need to consider while shooting...editing...creating a menu...????

Yes alot. there are format issues, bitrate issue and choosing the right DVD Discs for the master is very important

First, I would contact the replication studio and ask for their input about formats, bitrates, navigation menus, and other things to look for in general - they know best what kind of issues are they running into with masters they receive.

Second, I would test the heck out of the master to make sure the menus work properly on all brands of different players.
