Question: Since I capture all my video to hard drives, can I just record over the mini dv tape multiple times. Will it degrade the video any?

It depends on the quality of your tape. The quality of your DV picture will always look the same, but.... after many passes, you will start to get digital dropouts. I use cheap TDK tapes, but the quality seems the same as Panasonic and maybe even Sony. But at $3.10 each, I can usually get by with a dropout or 2 per tape. If I need to shoot something expensive, I use Panasonic Professional tapes mail order for under $5 each. even that is a good deal. I had a problem a few uses ago with head plugging and it was caused by Sony tape. I don't seem to ever have that trouble anymore since I went to Panasonic, and now hundreds of tapes later... TDK.
