I've seen alot of people referring to their camera as a Z1E of whatever. My says it is a Z1U N. What do these letters mean?

The Z1E name designates that it is the European model, and the Z1U designates that it is the United States Model.

However, either version of the Sony Z1 will shoot both NTSC and PAL formats.

I also see the Z1 box that has HVR-Z1P. What does the P stand for? But I know all the Z1 should be able to handle both PAL and NTSC. Am I right?

Mine was bought in Thailand and is a "P". It seems to be just like an "E". I think it just means "PAL". It does PAL/NTSC/50i/60i but is set to PAL/50i out of the box.

It think the difference from the E might be the difference in the power cable and/or instructions.

I believe the "P" stands for "Pacific". This model is also sold into Australia.

Bob is correct, "P" is for Pacific, "J" for Japan, "E" for Europe, "N" for Latin America, etc.
