Manual Shutter Speed?
 
Has anyone figgured out how to control the shutter on this thing yet?

The CX7 doesn't have manual shutter control in the sense of specific apertures. You have either the exposure profiles or an exposure control. That's it.

so....is there any way to keep the shutter at say...30/sec or 60/sec?

I don't have the CX7 but about all Sony's have a 'picture effect' program called slow shutter. You can adjust there the shutter speed but only slow shutter times (1/30 is inculded).
