You might want to check into the training at Learning @ Your Own PaceĀ® - lynda.com. Yeah, you have to pay for it but the value/dollar ratio is very high. Good quality stuff. Disclosure: I knew Lynda about 10 years ago before she left LA. One of the nicest people I've ever met.

Adobe's Web site is probably the best source for descriptions. If you're looking for "how they do" stuff, that gets a bit dodgier. There's so much there, the task is non-trivial.
Again, I'd point you to Lynda.com. For US$25, you can get all the training you want on any of the products they cover, which is a lot, for 30 days. Aside from going to Google-hell, Lynda is the best source I've found.
