i was left with the impression that macbooks are really not fast enough - but this may have been before the newest models came out

Just did the math - if you did have the necessary capture hardware to record from the component outs - you'd have to have a hard drive system that can SUSTAIN ~65MB (megaBYTES, not megaBITS) per second.

720p, 8-bit, 24fps. Video only.
((1280*720*3)/1024/1024)*23.976 = 63.28125 MB/s

2 Channels of 16/48 uncompressed audio = 0.182617188 MB/s
