Sounds like there is a field order mismatch - your m4v is progressive, hence no field order, no jerky stuff.
The FX1 shoots HDV, which is upper field first, while DVD is lower field first.

There is quite a lot you can do to make that footage look better than the original. You can clean it up with mostly free tools, and if you grade it to look like old footage, apply a 'scratched film'...

Try changing the file extension .vob to .mpeg.
If that doesn't work, us MPEG Streamclip - open the DVD, then go to File > Save as MPEG.

We call that FRAME DOUBLING, not deinterlacing.
You can either simply play the same frame twice or you can CREATE new intermediary frames with software such as Twixtor.

60i means 60 HALF frames; when combined through the process called deinterlacing, the two half fields produce ONE FRAME.
60/2=30 - 60i deinterlaced produces 30P.
