As for the location of your easy-setups, mine are located in the following directory:
~/Library/Application Support/Final Cut Pro System Support/Custom Settings/

Where ~/ is your root directory, and not your "User" directory.

Strange that yours are not in the same directory (as this is the default). I assume that the Easy-Setups you created do show on the drop down menu when you select Easy-Setups from the final cut menu? You might also check to see if for some reason they were written to your user directory. I also assume that you are on FCP 6.04? I also assume that you have installed FCP in the default location as well.
