It actually is, I believe, video noise. Because the GL2 doesnt do low light levels exceptionally, and because I under lit it, the gain on the camera was up way high.

I am adding a low level back light and a small fill to one side to bump up the brightness just a tad, and to be able to lower the gain.

The settings on the camera I want is:

Shutter: 1/60
Iris: 2.0
DB: 0

16:9
Frame Mode

That is a good idea. You can (and often must) use very bright lights to achieve a dark look. It is more the lighting ratios/contrast and shape that determine the look than actual brightness.
