how to take advantage on Sandy Bridge video performance

I have a PC on order coming with the new 'Sandy Bridge' processor. I chose this processor because it has logic that results in decode/encode operations being many time faster than any video card solution from AIT or NVidia.

What I read recently on Tom's Hardware is that software can't use the CPU when a discrete graphics card is installed, instead the software will use the graphics card for encoding/decoding. He said the work around was to use 2 monitors. 1 monitor would be driven by the CPU, the other by the GPU. I don't really understand that. Can someone explain this situation to me? The back of the PC will have video outputs both from the motherboard and the GPU so couldn't I just plug the monitor into the motherboard output and then the CPU would be used for the video work?
