It's really going to come down to your capabilities as an artist. My first wedding was shot with a Canon GL2 and absolutely nothing else of note (cheap consumer tripod, no lights, etc.) But it still stands as one of my best because of the passion I poured into it.

A single-chip camera certainly won't be useless. In the beginning, I'd use one for b-roll stuff and apply some filters and effects in post to give it an artsy look - so it looked like I purposly degraded the quality (but you can't do too much of that before you go overboard.)

And you can always make use of B&W, or some tinted form thereof, or the sepia look.
