Yeah, there is nothing wrong with PAR cans as such. But the lamps in them were originally aircraft landing lights, and produce an intensely tight beam. They work fine if you have enough of them and can bring down the level of the individual units. But bar owners being the cheapskates they tend to be, they never have enough of them, so the few they have are running full brightness. The human eye does a lot better job of compensating for the level differences than any camera can, so they get away with it.
