I can't count the number of times I've been faced with backlighting at a wedding and in some cases, at the ceremony in a church. For some reason they felt they needed a huge stained glass window dead center on the altar facing west. All you can do is try to tighten up the framing and move off dead center. Not always possible but if it is, I'd rather shoot from an angle than straight in. then as much as I would hate to do it, I'd work on it in post to soften up the blow out.
Sometimes you just gotta roll with the punches. You do the best you can and move on.
