Vegas and 720/60p

How well does Vegas Pro 8 work with HDV 720/60p?

I have a Core 2 Quad (Q6600) 2.40GHz processor with 3 gigs of RAM system. It also has 500 Gigs of storage.

Would I be able to do a 2 camera multicam edit (wedding videos) with this system without it getting too bogged down?

Yes, you should be fine with a 2 camera edit.
