Went to Radio Shack and came up with a solution that works out great - turns out headphone extension cables also double as mic extension cables, so this is the setup:

Stereo Mic 1/8 -> stereo extension cable 1/8 -> Stereo-To-Mono adapter -> Y-Cable -> Camera
