So, how fast of cards do we need?

Will the Lexar Professional 400x work?

Lexar 32GB Professional 400x Compact Flash LCF32GCTBNA4002 B&H

This is what i've been using with my 5d for years.

I'm getting 4 of these. First of all, I only shoot SanDisk. And with redundant recording, 64 and 128gb cards are now an option. With 4x 64GB that's 340 minutes of redundant recording.

Bellow is a chart with supported cards.
But I guess any UDMA CF card with more then 45MB/Sec should work.

I'm going to use

1x Transcend CompactFlash Ultimate Card 600x, 32GB
4x SanDisk Extreme Compact Flash, 400x, 60MB/s, 32GB

I think it is best to refer directly to Canon's EOS C300 FAQ.

Clearly, the Sandisk CF cards are the only ones that have been thoroughly tested and support overcranking.

This is my main question:
