Hard Drive set up help?

Hi all. Not sure where to post this question, but this seemed like the best spot...feel free to move if it should be somewhere else. I have a Mac Pro dual duo core machine that I am setting up for editing. It has one 250GB drive that I quickly filled up with HD video. I know its bad to capture to the same drive as your apps and 250Gb is pretty small for video. So I had an old Western Digital Mybook 1TB drive that I dismantled to take the two 500GB drives that were inside out of. These are WD 500 GB caviar drives (WD5000AAKS-00TMA0). They are 7200RPM drives with 16mb of cache. I partitioned them as Mac extended journaled. However, when I capture to one of them it almost instantly falls behind the capture window. I then decided to just test moving some files over to them, so I copied some files from my 250GB drive and pasted them on the new 500GB drive. I think I was dragging about 40GB of files, but it said it would take 20 hours to copy?! What gives? Did I set the drives up wrong? Is there some setting I need to change so they actually spin 7200RPM?? I'd really like to use these if possible...but they are so slow right now there is no way!! Thanks for any help you can send my way.
