HDV Storage - Could I get some tips?

I'm currently embarking on a documentary film project for which I envision shooting around twenty hours of footage and I've chosen the FX1 over the HVX200 because not having a tape backup makes me nervous. I also have access to two HVR-A1U rentals in my area at $45 a day that would be easy to mix in if I need extra cameras for particular events. The project centers around the renovation of a home and the community of people working on it/moving into it. There will be lots of externals, interviews, neighborhood footage, and internal footage as the renovations are taking place. The final film will be between 30 & 60 minutes in length depending on how things go.

I'm going to cut the piece in DNxHD 145 using the software only version of avid media composer. I'm comfortable shooting/editing in HDV, but haven't taken on a project of this scale in HDV before so I'm a bit nervous about storage options. Which of the following approaches do you think would work best?

1. 5x 320GB disk RAID 5 setup (capture everything in DNxHD 145)

2. 1x 320GB (capture everything as DV then batch capture DNxHD 145 later)

3. 1x 320GB (capture only select takes in DNxHD 145)

Thanks for any help you can give. All of this HDV stuff is new to me and this site has been an amazing resource so far.
