HD to SD Down-converting help?

Hello,

I am shooting a documentary about a music festival using a Canon XHA1. I would love it if someone could give me some advice.

I would like the finished product to be in 16:9 widescreen format. The final product will also be SD as my computer (G4 powerbook) seems incapable of editing HD footage. I will be using FCP.

What I would like to know is what is the best way to do this for the best visual results?

Should I capture in HD and downconvert? If so how is this done?

I am relatively new to the world of video so I would appreciate any feedback I can get.
