MPEG2 Encoding

I bought TMPGEnc Plus 2.5 last year and really never learn or fully utilized this supposedly great encoder.

Can anyone please tell me whats the best setup to encode an AVI to MPEG2 for DVD burning?

Also, what is "variable 2 Pass" mean? Is this a default setup with TMPGEnc or do I need to set it up?
