Chipsets

The difference btween the chipsets are memory and options

845 is for ddr memory
850 support rambus memory (faster, more expensive)

The letters indicate options
Standard 850 and 845 chipsets use the 400mhz FSB

The e and later use 533 fsb
The g indicates that it has built in video (I would avoid that)

Skipping the G option on the chipset your choices are
850e or 845e

What memory do you wish to use?

That will answer your chipset question.
