16x9 video projector
If I shoot in 16x9 on a canon Xl1s is it beter resolution than 4x3 if shown on a video projector in 16x9 mode?

No. The XL1 just takes the 4:3 mode and cuts the top bottom off it (more or less). You will be no better off.
