They do indeed roll when video'd with a high shutterspeed. The effect looks very different than the rolling shutter characteristic from the CMOS imagers. The way it looks in the camera when shooting a high shutter speed is like a bending of the picture. Everything slants left or right depending on the direction the camera is being panned.

On an aside, when you are under florescent light using a CRT there is an interference strobing effect that occurs between the CRT and the light source. Some people are very sensitive to it. This is why its good to set your computer monitor when using florescent lighting to something other than 60hz. It is also less likely to occur in the newer lights with electronic ballasts.
