I have the pleasure of wrangling a dual 6-core machine at work.
We use it mainly for renders and transcoding.

Main Concept H.264 & MPEG-2 codecs uses almost all cores and can reach 100% CPU utilization, and so does x264 / DropFolders. Expression Encoder is not very impressive on CPU usage.

Sorenson Squeeze is terrible at CPU utilization, but it is very easy to use and can transcode a huge number of formats.

This is using an Asus Z8NA motherboard which is very impressive.

Can someone elaborate on the memory platform .... I am rebuilding my current system and will trying to do it correctly ......

Just buy the same number of stick as you have slots. Build your PC around your motherboard and processor. Memory you need is dictated by the board you choose. You just have to shop for the best memory you can reasonably afford.
