LCD dims in and out

The LCD dims in and out at times.... I especially notice it when im outside.... i guess it adjusts to the surrounding light?!?

Is there away to make it stop? I end up turning the camera off and on again to reset to the proper brightness.

Is there actually way to set the LCD to a proper setting? Somthing thats not to bright nor to dark to get a decent reading for adjusting exposure.
