Knee

Sometimes I get light skinned subjects that have skin somewhat blown out. Am shooting indoors with soft box lights. Would setting the knee to something other than auto help? Should I go high or low? Thanks.

Low for sure. A high knee would tend to blow out more. With the knee set to low your images might turn out a little more flat looking but you can fix that in post. A blown out skin highlight......not so much.
