What resolution for photos?

I need to put some still images in a video and I'm unsure what to scan the images at. I'm going to be using Photoshop. The footage was shot anamorphic, so I guess I need to crop the photo as if it were letterboxed (without incorporating the black bars) and then stretch it. I know how to do that in Photoshop, but I don't know what resolution the letterboxed image should be, or the final image. I know NTSC is 720 x 480, but this whole square versus rectangular pixel thing really confuses me. Oh, I'm using FinalCut. Should I save the images as a JPEGs? Also, what settings should I use in Photoshop to make sure I have a legal values?

Excellent links. Thank you Jeff. The short answer is to create the image in Photoshop at 960 x 534. I guess FinalCut takes it from there. Thanks again.

Hmmm, when I imported the photos it cut off the tops of people's heads. I thought you didn't have to worry about the picture safe area (for the vertical resolution anyway) with anamorphic. Am I doing something wrong?
