same edit workflow and equipments

What's your workflow and equipment in editing onsite weddings to be view at the reception, Do you start capturing the preparation footage before going to church? Do you use laptops or mini/barebone PC? How much money (minimum) do i need for laptop that capable of doing this kind of service. I dont need a very large harddisk because I shoot 1 cam only. approximately 30minutes raw footage at preparation and 40minutes footage at ceremony and my final output is 3-5minutes ( 1 song) hardcuts and dissolve only. I'm using premiere pro 1.5

My budget for laptop is $1.5k-$2k only. Do I really need a laptop or it can be done with barebone PC like shuttle XP?
