Is the A7s ii really that good in dim light?
Yes. This was shot at night, at f4. The camera truly saw what I could barely see with my own eyes:

And HDR is on the rise too, but...
HDR is: 1. wider dynamic range than REC709 - maybe 12 stops, 2. wider color gamut than REC709 (REC2020) and 3. 10bit (so more gradations of color) and maybe 4:2:2 rather than 4:2:0.

Even better, the Vlog L REC709 LUT can be applied *in camera* with the GH5, so you can see better what your video will look like in the field, at least as a start.

I think you are confusing the wrapper and the codec. The RX10 III 4K video files are recoded in XAVC S MP4. XAVC S is just a variant of H264. The XAVC codec is much better than the other H264 codecs...
