One of the 5D MKlll's awesome new features is you most certainly can monitor audio through earphones directly from the camera, and levels on the LCD via the info menu.

Most times I do the slider shot both ways, and pick which one looks best next to the other shots when I edit. I'm not moving the rig when I do it. I just get one shot sliding right, then one sliding...
