For #1: set Custom Menu AF+MF to "ON", then pressing and holding the shutter button while turning the focus ring will allow manual focus. An easier...

Congratulations on your first upload.

You may want to experiment with increasing your rendering bit rate to "12 Mbps". Choose "Custom" from your initial "6 Mbps HD 720-30p" rendering dialog....

This might be what you're looking for. In Manual Focus mode, press and hold the "Q Menu" button, then press "Set".

I've had good luck by changing Custom Menu Settings "AF/AE Lock" to "AF/AE" and "AF/AE Lock Hold" to "On".

Now pressing the "AF/AE Lock" button on the camera will focus and lock both AF and AE...

Settings were mostly 1080/60i, Film Mode: Vibrant, +1 Sharpness, +1 Saturation, WB: Sun. Indoors, Film Mode: Standard, WB: Auto.

The Lumix 7-14 is a fine lens, unfortunately, it has no filter threads. Other than an ND for DOF, it seems fairly happy without them so far.
